Gyokuro is a unique green tea that has long been considered by many to be the most exquisite type of tea cultivated in Japan. Japanese tea gardens are known to be magnificently maintained and export about 85,000 tons of green tea annually. The climate, frequented by dense fogs and heavy dews, makes the Japanese tea garden a visual treat. At the base of the Fuji-Yama, in the Uji region, the precious Gyokuro green tea is grown. Translated in English as Jade Dew or Pearl Dew, this tea has very fine leaves that are dark green in color. When steeped, its liquor is a pale, greenish-gold, and gives no hint of its complex flavor. Gyokuro has a delicate, mouth-filling flavor with distinct flowery overtones. First sold in Japan around 1835 by the Yamamoto tea dynasty, this rare tea is cultivated differently than most green tea varieties. During the first flush tea growth (the first 3 weeks of May), the tea plant is shaded from the sunlight. The sun-deprived leaves grow under a canvas and bamboo cover, which causes them to develop additional chlorophyll, making them darker than normal. The shading also reduces the leaves’ polyphenol content and in turn makes the leaves sweeter and milder when brewed. Each leaf is hand cut with specially designed tea shearing clippers, steamed, and then specially formed into its signature flat, pointed needle shape.
